Vegetables are among the healthiest foods you can eat. They provide fiber, vitamins, minerals, antioxidants, and many other compounds that support the heart, digestive system, and overall health.

So why do some health stories warn that eating too many vegetables can cause kidney failure?

The answer is more complicated than the dramatic headlines suggest.

For most healthy people, eating vegetables as part of a balanced diet is not dangerous. However, certain vegetables contain relatively high amounts of oxalates or potassium, and consuming extremely large quantities—particularly in concentrated forms such as juices or smoothies—may create problems in people with specific medical conditions.

This does not mean vegetables are poisonous.
