Ingredients

For the Steak Bites

  • 2 lb (900 g) sirloin steak, ribeye, or filet mignon, cut into 1½-inch cubes

  • 12 slices bacon, cut in half

  • 2 tbsp olive oil

  • 1 tsp kosher salt

  • 1 tsp freshly ground black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp smoked paprika

  • ½ tsp dried thyme

  • ½ tsp dried rosemary

  • Wooden toothpicks, soaked in water

For the Garlic Butter Glaze

  • 4 tbsp unsalted butter

  • 3 garlic cloves, minced

  • 1 tbsp chopped fresh parsley

  • 1 tsp Worcestershire sauce

  • ½ tsp cracked black pepper

Instructions

Step 1 – Prepare the Steak

Pat the steak cubes dry with paper towels.

Season evenly with:

  • Salt

  • Black pepper

  • Garlic powder

  • Onion powder

  • Smoked paprika

  • Thyme

  • Rosemary

Drizzle with olive oil and toss to coat.

Let rest for 30 minutes if time allows.

Step 2 – Wrap with Bacon

Wrap each steak cube with half a slice of bacon.

Secure with a soaked toothpick.

Arrange on a parchment-lined baking sheet or wire rack.

Step 3 – Bake

Preheat oven to 400°F (200°C).

Bake for 15–18 minutes.

Turn each bite once halfway through cooking.

Step 4 – Crisp the Bacon

Switch the oven to Broil.

Broil for 2–4 minutes, watching carefully until the bacon becomes crisp and caramelized.

Step 5 – Prepare Garlic Butter

While the steak cooks, melt the butter in a small saucepan.

Add:

  • Garlic

  • Worcestershire sauce

  • Black pepper

Cook for about 1 minute until fragrant.

Remove from heat and stir in fresh parsley.

Step 6 – Finish

Brush the hot bacon-wrapped steak bites generously with the garlic butter.

Serve immediately.
