Beef Stir-Fry with Mushrooms & Snow Peas 

Ingredients (2–3 servings)

For the Beef

  • 300 g beef sirloin or flank steak, thinly sliced

  • 1 tbsp soy sauce

  • 1/2 tbsp oyster sauce

  • 1 tsp cornstarch

  • 1 tsp sesame oil

  • 1/2 tsp black pepper

  • 1 tsp minced garlic

  • 1 tsp minced ginger (optional)

Vegetables

  • 1–1.5 cups snow peas

  • 1 cup sliced mushrooms (button, shiitake, or cremini)

  • 1/2 cup green peas (optional)

  • 2–3 green onions, chopped

Stir-Fry Sauce

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tbsp hoisin sauce (optional, for sweetness)

  • 1 tbsp rice vinegar or mirin

  • 1 tbsp brown sugar or honey

  • 1/4 cup beef broth or water

  • 1 tsp cornstarch (mix with sauce to thicken)

  • 1/2 tsp chili flakes (optional)

For Cooking

  • 1–2 tbsp vegetable oil

  • Toasted sesame seeds for garnish


Instructions


1. Marinate the Beef

  1. In a bowl, mix beef with soy sauce, oyster sauce, sesame oil, pepper, garlic, ginger, and cornstarch.

  2. Marinate 15–20 minutes.


2. Prep the Vegetables

  1. Trim snow peas.

  2. Slice mushrooms.

  3. Chop green onions.

  4. If using fresh peas, blanch for 1 minute.


3. Make the Stir-Fry Sauce

Whisk together soy sauce, oyster sauce, hoisin, vinegar, brown sugar, broth, cornstarch, and chili flakes.


4. Cook the Beef

  1. Heat oil in a pan or wok over high heat.

  2. Add beef and stir-fry 1–2 minutes until browned but not overcooked.

  3. Remove and set aside.


5. Cook the Vegetables

  1. In the same pan, add a bit more oil if needed.

  2. Add mushrooms and cook until lightly golden.

  3. Add snow peas and peas. Stir-fry for 1–2 minutes (keep vegetables crisp).


6. Combine Everything

  1. Return beef to the pan.

  2. Pour the stir-fry sauce over.

  3. Toss everything on high heat for 1–2 minutes until sauce thickens and coats evenly.

  4. Add green onions and mix.


7. Serve

  • Sprinkle sesame seeds on top.

  • Serve hot with steamed rice or noodles.


Optional Upgrades

  • Add bell peppers or baby corn.

  • Use Shaoxing wine in the sauce for depth.

  • Add chili oil for heat.
