Beef Stir-Fry with Mushrooms & Snow Peas
Ingredients (2–3 servings)
For the Beef

300 g beef sirloin or flank steak, thinly sliced
-
1 tbsp soy sauce
-
1/2 tbsp oyster sauce
-
1 tsp cornstarch
-
1 tsp sesame oil
-
1/2 tsp black pepper
-
1 tsp minced garlic
-
1 tsp minced ginger (optional)
Vegetables
-
1–1.5 cups snow peas
-
1 cup sliced mushrooms (button, shiitake, or cremini)
-
1/2 cup green peas (optional)
-
2–3 green onions, chopped
Stir-Fry Sauce
-
2 tbsp soy sauce
-
1 tbsp oyster sauce
-
1 tbsp hoisin sauce (optional, for sweetness)
-
1 tbsp rice vinegar or mirin
-
1 tbsp brown sugar or honey
-
1/4 cup beef broth or water
-
1 tsp cornstarch (mix with sauce to thicken)
-
1/2 tsp chili flakes (optional)
For Cooking
-
1–2 tbsp vegetable oil
-
Toasted sesame seeds for garnish
Instructions

1. Marinate the Beef
-
In a bowl, mix beef with soy sauce, oyster sauce, sesame oil, pepper, garlic, ginger, and cornstarch.

Marinate 15–20 minutes.
2. Prep the Vegetables
-
Trim snow peas.
-
Slice mushrooms.
-
Chop green onions.
-
If using fresh peas, blanch for 1 minute.
3. Make the Stir-Fry Sauce
Whisk together soy sauce, oyster sauce, hoisin, vinegar, brown sugar, broth, cornstarch, and chili flakes.
4. Cook the Beef

Heat oil in a pan or wok over high heat.

Add beef and stir-fry 1–2 minutes until browned but not overcooked.

Remove and set aside.
5. Cook the Vegetables
-
In the same pan, add a bit more oil if needed.
-
Add mushrooms and cook until lightly golden.
-
Add snow peas and peas. Stir-fry for 1–2 minutes (keep vegetables crisp).
6. Combine Everything
-
Return beef to the pan.
-
Pour the stir-fry sauce over.
-
Toss everything on high heat for 1–2 minutes until sauce thickens and coats evenly.

Add green onions and mix.
7. Serve
-
Sprinkle sesame seeds on top.
-
Serve hot with steamed rice or noodles.
Optional Upgrades
-
Add bell peppers or baby corn.
-
Use Shaoxing wine in the sauce for depth.

Add chili oil for heat.
