Blueberry Lemonade Buttermilk Cake: Fresh & Flavorful

 

Ingredients:

For the cake:

  • 2 ½ cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 1 ½ cups granulated sugar

  • 3 large eggs

  • 1 tbsp lemon zest

  • 3 tbsp fresh lemon juice

  • 1 cup buttermilk

  • 1 ½ cups fresh blueberries

  • 1 tbsp flour (for coating blueberries)

For the glaze:

  • 1 cup powdered sugar

  • 2-3 tbsp fresh lemon juice

Instructions:

1.  Prepare the Oven and Pan:

-  Preheat your oven to 350°F (175°C).

-  Grease and flour a 9-inch round cake pan, or line it with parchment paper for easy removal.

2.  Mix Dry Ingredients:

-  In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3.  Cream Butter and Sugar:

-  In a large bowl, beat the butter and sugar together using an electric mixer until light and fluffy (about 3-5 minutes).

4.  Add Eggs and Lemon:

-  Add the eggs one at a time, beating well after each addition.

-  Stir in the lemon zest and lemon juice.

5.  Alternate Adding Dry Ingredients and Buttermilk:

-  Gradually add the dry ingredient mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.

6.  Coat Blueberries:

-  Toss the blueberries in the 1 tbsp of flour to coat them. This helps prevent the berries from sinking to the bottom of the cake during baking.

7.  Fold in Blueberries:

-  Gently fold the coated blueberries into the cake batter.

8.  Bake the Cake:

-  Pour the batter into the prepared cake pan.

-  Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

9.  Make the Glaze:

-  While the cake is cooling, whisk together the powdered sugar and lemon juice in a small bowl until smooth.

10.  Cool the Cake:

-  Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

11.  Glaze the Cake:

-  Once the cake has cooled, drizzle the lemon glaze over the top, allowing it to drip down the sides.

12.  Serve and Enjoy:

-  Slice the cake and enjoy the fresh, tangy flavor of the Blueberry Lemonade Buttermilk Cake.
