Blueberry Vanilla Cream Danish

Ingredients

For the Pastry

  • 1 sheet puff pastry, thawed

  • 1 egg, beaten (for egg wash)

For the Vanilla Cream

  • 1 cup whole milk

  • 2 egg yolks

  • ¼ cup granulated sugar

  • 2 tbsp cornstarch

  • 1 tsp vanilla extract

  • 1 tbsp unsalted butter

For the Topping

  • 1 cup fresh blueberries

  • Fresh mint leaves (optional)

Optional Glaze

  • ½ cup powdered sugar

  • 1–2 tbsp milk

  • ½ tsp vanilla extract

Instructions

Step 1 – Prepare the Vanilla Cream

  1. In a saucepan, heat the milk until steaming (do not boil).

  2. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.

  3. Slowly whisk the warm milk into the egg mixture.

  4. Return everything to the saucepan.

  5. Cook over medium heat, whisking constantly, until thickened.

  6. Remove from heat and stir in butter and vanilla.

  7. Cover with plastic wrap directly on the surface and cool completely.

Step 2 – Prepare the Pastries

  1. Preheat oven to 400°F (200°C).

  2. Roll out the puff pastry slightly.

  3. Cut into six circles (about 4 inches / 10 cm).

  4. Place on a parchment-lined baking tray.

  5. Using a smaller glass or cutter, gently press a circle into the center without cutting through.

  6. Brush the outer ring with egg wash.

Step 3 – Bake

Bake for 18–20 minutes, until the pastries are puffed and deeply golden.

Allow to cool for 10 minutes.

If the centers have puffed up, gently press them down with the back of a spoon.

Step 4 – Assemble

  1. Spoon the cooled vanilla cream into the center of each Danish.

  2. Top with fresh blueberries.

  3. Garnish with a small mint leaf.

Step 5 – Optional Glaze

Mix powdered sugar, milk, and vanilla until smooth.

Drizzle lightly over the pastries before serving.

  • Chill the pastry cream completely before filling to prevent sogginess.

  • For extra shine, brush the blueberries with warmed apricot jam.
