A shocking image claims that eating just one water chestnut is equivalent to allowing 100,000 parasites into your body. The reality is more complicated—and much less dramatic.

At first glance, the claim sounds terrifying.
But before throwing away every water chestnut in your kitchen, there is an important distinction to make: water chestnuts themselves are not inherently poisonous, and there is no scientific basis for assigning a fixed number such as 100,000 parasites to eating one.
However, there is a legitimate food-safety concern involving certain aquatic plants and parasites.
And understanding that difference is much more useful than simply believing a viral caption.
What Are Those Dark Fruits?
The food shown in the image appears to be water chestnuts, particularly the aquatic plant commonly known as Chinese water chestnut (Eleocharis dulcis).
Despite the name, they aren't actually nuts.
They are aquatic plants that grow in marshes, ponds, and other wet environments. The edible corm is found underground and has a crisp texture and mildly sweet flavor.
Water chestnuts are commonly eaten in various Asian cuisines.
They can be consumed fresh, boiled, steamed, stir-fried, canned, or incorporated into other dishes.
The dark outer skin is not necessarily evidence that the food is rotten or contaminated.
The concern comes from where and how the plant is grown and consumed—not from the vegetable automatically containing enormous numbers of parasites.
Where Does the Parasite Concern Come From?

Those statements are not equivalent.
Water chestnuts can be part of normal diets, especially when appropriately sourced and prepared.
