The concern often involves members of the gourd family, which includes bitter melon, zucchini, cucumbers, pumpkins, and certain squash varieties. Under specific environmental conditions, these plants may produce elevated levels of compounds known as cucurbitacins. These naturally occurring chemicals are responsible for an intensely bitter flavor and can become toxic when present in unusually high concentrations.
Normally, commercial vegetable varieties are bred to contain very low levels of these substances. However, factors such as cross-pollination, environmental stress, drought, temperature fluctuations, or genetic variations can occasionally result in higher concentrations.
