Serves: 4 | Prep Time: 15 minutes | Cook Time: 30 minutes | Total Time: 45 minutes

Ingredients

For the Garlic Butter Mushrooms

  • 1½ lbs (700 g) cremini or button mushrooms, halved

  • 2 tbsp olive oil

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 small shallot, finely diced

  • 1 tsp fresh thyme leaves

  • 1 tsp fresh parsley, chopped

  • ½ tsp smoked paprika

  • ¼ tsp crushed red pepper flakes (optional)

  • 1 tbsp Worcestershire sauce

  • 2 tbsp beef or vegetable broth

  • Salt and freshly ground black pepper, to taste

For the Crispy Fries

  • 4 large russet potatoes, cut into fries

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp onion powder

  • Salt and black pepper

  • Fresh parsley, chopped (for garnish)

Optional Side Salad

  • Mixed greens

  • Cherry tomatoes, halved

  • Olive oil

  • Balsamic vinegar

  • Salt and pepper

Instructions

Step 1 – Prepare the Fries

  1. Preheat the oven to 425°F (220°C).

  2. Soak the potato strips in cold water for 20–30 minutes, then drain and pat completely dry.

  3. Toss with olive oil, garlic powder, paprika, onion powder, salt, and pepper.

  4. Spread in a single layer on a baking tray.

  5. Bake for 35–40 minutes, flipping halfway through, until golden and crispy.

Step 2 – Cook the Mushrooms

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add mushrooms in a single layer and cook without stirring for 3–4 minutes to develop a deep golden color.

  3. Stir and continue cooking another 4–5 minutes until browned.

Step 3 – Build the Sauce

  1. Reduce heat to medium.

  2. Add butter and allow it to melt.

  3. Stir in shallots and garlic; cook for 1–2 minutes until fragrant.

  4. Add thyme, paprika, and red pepper flakes.

  5. Pour in Worcestershire sauce and broth.

  6. Simmer for 2–3 minutes until the sauce lightly thickens.

  7. Finish with chopped parsley and adjust seasoning.

Step 4 – Assemble

Arrange the crispy fries on one side of the plate.

Spoon the garlic butter mushrooms over the center, allowing some sauce to pool underneath.

Serve with a simple mixed green salad dressed with olive oil and balsamic vinegar.

Chef's Tips

  • Avoid overcrowding the pan so the mushrooms caramelize instead of steaming.

  • Use high heat initially for the best browning.

  • A splash of dry white wine can replace the broth for added depth.

  • Fresh thyme and parsley provide the brightest flavor.

  • Sprinkle Parmesan over the fries immediately after baking for an extra savory finish.

Serving Suggestions

Pair with:

  • Grilled steak
