Grilled Pineapple with Caramel Sauce & Vanilla Ice Cream
Ingredients
For the pineapple

2–3 thick pineapple rings
-
1–2 tsp melted butter or oil
-
1–2 tsp brown sugar (optional)
For the caramel sauce
-
¼ cup butter
-
½ cup brown sugar
-
¼ cup heavy cream (or coconut cream for a tropical twist)
-
Pinch of salt
-
Optional: ½ tsp vanilla extract
For serving
-
1 scoop vanilla ice cream
-
Fresh mint leaves (optional)
Instructions

1. Prepare the pineapple
-
Slice pineapple into thick rings and remove the core.
-
Brush both sides with melted butter.
-
If desired, sprinkle a little brown sugar for extra caramelization.
2. Grill the pineapple
-
Heat a grill pan or outdoor grill to medium-high heat.
-
Place the pineapple rings on the grill.
-
Cook 2–3 minutes per side until grill marks appear and the fruit becomes caramelized.
-
Remove and set aside.
3. Make the caramel sauce
-
In a small saucepan, melt butter over medium heat.
-
Add brown sugar and stir until fully dissolved.
-
Pour in the heavy cream and mix continuously.
-
Cook for 2–3 minutes until the sauce thickens slightly.

Add a pinch of salt and vanilla extract (optional).

Remove from heat.
4. Assemble the dessert
-
Place the grilled pineapple rings on a plate.
-
Spoon warm caramel sauce over the top.
-
Add a scoop of vanilla ice cream in the center.
-
Garnish with mint leaves if desired.
5. Serve
-
Serve immediately while the pineapple is warm and the ice cream is cold for the perfect contrast.
