Grilled Pineapple with Caramel Sauce & Vanilla Ice Cream 

Ingredients

For the pineapple

  • 2–3 thick pineapple rings

  • 1–2 tsp melted butter or oil

  • 1–2 tsp brown sugar (optional)

For the caramel sauce

  • ¼ cup butter

  • ½ cup brown sugar

  • ¼ cup heavy cream (or coconut cream for a tropical twist)

  • Pinch of salt

  • Optional: ½ tsp vanilla extract

For serving

  • 1 scoop vanilla ice cream

  • Fresh mint leaves (optional)


Instructions

1. Prepare the pineapple

  1. Slice pineapple into thick rings and remove the core.

  2. Brush both sides with melted butter.

  3. If desired, sprinkle a little brown sugar for extra caramelization.

2. Grill the pineapple

  1. Heat a grill pan or outdoor grill to medium-high heat.

  2. Place the pineapple rings on the grill.

  3. Cook 2–3 minutes per side until grill marks appear and the fruit becomes caramelized.

  4. Remove and set aside.

3. Make the caramel sauce

  1. In a small saucepan, melt butter over medium heat.

  2. Add brown sugar and stir until fully dissolved.

  3. Pour in the heavy cream and mix continuously.

  4. Cook for 2–3 minutes until the sauce thickens slightly.

  5. Add a pinch of salt and vanilla extract (optional).

  6. Remove from heat.

4. Assemble the dessert

  1. Place the grilled pineapple rings on a plate.

  2. Spoon warm caramel sauce over the top.

  3. Add a scoop of vanilla ice cream in the center.

  4. Garnish with mint leaves if desired.

5. Serve

  • Serve immediately while the pineapple is warm and the ice cream is cold for the perfect contrast.
