Food poisoning is often dismissed as a temporary stomach problem, but in rare and severe cases it can become life-threatening. Reports of young, otherwise healthy adults becoming critically ill after eating contaminated food serve as a reminder that food safety should never be taken lightly. While headlines may suggest that chicken itself is dangerous, health experts emphasize that the real risk usually comes from improper storage, undercooking, or cross-contamination rather than the meat itself.
Chicken is one of the most widely consumed sources of protein worldwide. It is nutritious, affordable, and can be part of a healthy diet when prepared correctly. However, raw poultry may naturally carry harmful bacteria such as Salmonella, Campylobacter, or, less commonly, certain strains of E. coli. These bacteria are destroyed by thorough cooking, but they can spread easily if food is handled carelessly.
Cross-contamination is among the most common causes of foodborne illness. For example, using the same cutting board or knife for raw chicken and fresh vegetables without proper washing can transfer bacteria to foods that will not be cooked again. Likewise, touching kitchen surfaces or utensils with contaminated hands allows germs to spread throughout the preparation area.
Another major risk is undercooking. Chicken should always be cooked until the thickest part reaches an internal temperature of at least 74°C (165°F). The color of the meat alone is not a reliable indicator of safety. Using a food thermometer is the best way to ensure harmful bacteria have been eliminated.
Improper storage also increases the danger. Raw chicken should be refrigerated promptly and never left at room temperature for more than two hours—or one hour in hot weather. Frozen poultry should be thawed safely in the refrigerator, under cold running water, or in a microwave, never on a kitchen counter where bacteria can multiply rapidly.
Symptoms of food poisoning often begin within several hours to a few days after eating contaminated food. Common signs include nausea, vomiting, diarrhea, stomach cramps, fever, and weakness. Most healthy adults recover within a few days with rest and adequate hydration.
However, severe infections can become medical emergencies. Persistent vomiting, bloody diarrhea, high fever, severe dehydration, confusion, difficulty urinating, or symptoms lasting several days require prompt medical evaluation. Older adults, young children, pregnant women, and people with weakened immune systems are particularly vulnerable to complications.
In rare circumstances, severe dehydration or overwhelming infection may contribute to complications affecting organs such as the kidneys. Acute kidney injury can occur when the body loses large amounts of fluid or when certain bacterial toxins damage the kidneys. These complications are uncommon but highlight why serious foodborne illness should never be ignored.
Fortunately, preventing most cases of food poisoning is straightforward. Wash your hands thoroughly before and after handling raw poultry, clean all utensils and cutting boards with hot soapy water, separate raw meat from ready-to-eat foods, cook chicken completely, and refrigerate leftovers within two hours. Leftover cooked chicken should be reheated until steaming hot before eating.
It is important to remember that eating chicken does not normally cause kidney failure. Millions of people safely consume poultry every day. When tragic cases make the news, investigators often find that contamination, improper handling, inadequate cooking, or delayed treatment for severe food poisoning played a significant role rather than the food itself.
Good kitchen hygiene remains the most effective defense. By following basic food safety practices and seeking medical care promptly if severe symptoms develop, families can dramatically reduce their risk of serious foodborne illness while continuing to enjoy chicken as part of a balanced diet.
