Ingredients

For the Salmon

  • 4 salmon fillets (6 oz / 170 g each)

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

Honey Glaze

  • 3 tbsp honey

  • 2 tbsp Dijon mustard

  • 2 tbsp soy sauce

  • 2 garlic cloves, minced

  • 1 tbsp fresh lemon juice

  • 1 tsp whole-grain mustard (optional)

  • 1 tsp fresh thyme leaves

Roasted Peaches

  • 3 ripe peaches, halved and sliced

  • 1 tbsp butter

  • 1 tbsp honey

  • Pinch of cinnamon (optional)

Garnish

  • Fresh thyme sprigs

  • Freshly cracked black pepper

  • Lemon wedges

Step 1 – Prepare the Glaze

In a small bowl, whisk together:

  • Honey

  • Dijon mustard

  • Soy sauce

  • Garlic

  • Lemon juice

  • Whole-grain mustard

  • Thyme

Set aside.

Step 2 – Season the Salmon

Pat the salmon dry.

Season both sides with:

  • Salt

  • Pepper

  • Smoked paprika

  • Garlic powder

Step 3 – Sear the Salmon

Heat olive oil in a large oven-safe skillet over medium-high heat.

Place the salmon skin-side down (if skin-on).

Cook for 3–4 minutes until lightly crisp.

Flip carefully.

Brush generously with the honey glaze.

Step 4 – Roast

Preheat oven to 400°F (200°C).

Transfer the skillet to the oven.

Bake for 8–10 minutes, depending on thickness, until the salmon flakes easily with a fork.

Brush with another layer of glaze during the last 2 minutes of cooking.

Step 5 – Roast the Peaches

While the salmon bakes, melt butter in a skillet.

Add peaches and honey.

Cook for 3–4 minutes until lightly caramelized and tender.

Sprinkle with cinnamon if desired.

Step 6 – Serve

Spoon extra glaze onto a serving platter.

Arrange the salmon with the roasted peaches.

Garnish with fresh thyme and serve immediately.

  • Use fresh, ripe peaches for the sweetest flavor.

  • Do not overcook the salmon—an internal temperature of 125–130°F (52–54°C) yields a moist, tender center.

  • Nectarines or apricots are excellent substitutes for peaches.

  • Add a pinch of red pepper flakes to the glaze for a subtle kick.

  • Let the salmon rest for 2–3 minutes before serving.
