Salt and freshly ground black pepper, to taste

1 tsp smoked paprika

½ tsp garlic powder
Honey Glaze

3 tbsp honey
-
2 tbsp Dijon mustard
-
2 tbsp soy sauce
-
2 garlic cloves, minced
-
1 tbsp fresh lemon juice
-
1 tsp whole-grain mustard (optional)
-
1 tsp fresh thyme leaves
Roasted Peaches
-
3 ripe peaches, halved and sliced
-
1 tbsp butter
-
1 tbsp honey
-
Pinch of cinnamon (optional)
Garnish
-
Fresh thyme sprigs
-
Freshly cracked black pepper
-
Lemon wedges
Instructions

Step 1 – Prepare the Glaze
In a small bowl, whisk together:

Honey
-
Dijon mustard
-
Soy sauce
-
Garlic
-
Lemon juice
-
Whole-grain mustard
-
Thyme
Set aside.
Step 2 – Season the Salmon
Pat the salmon dry.
Season both sides with:

Salt
-
Pepper
-
Smoked paprika
-
Garlic powder
Step 3 – Sear the Salmon
Heat olive oil in a large oven-safe skillet over medium-high heat.
Place the salmon skin-side down (if skin-on).
Cook for 3–4 minutes until lightly crisp.
Flip carefully.
Brush generously with the honey glaze.
Step 4 – Roast
Preheat oven to 400°F (200°C).
Transfer the skillet to the oven.
Bake for 8–10 minutes, depending on thickness, until the salmon flakes easily with a fork.
Brush with another layer of glaze during the last 2 minutes of cooking.
Step 5 – Roast the Peaches
While the salmon bakes, melt butter in a skillet.
Add peaches and honey.
Cook for 3–4 minutes until lightly caramelized and tender.
Sprinkle with cinnamon if desired.
Step 6 – Serve
Spoon extra glaze onto a serving platter.
Arrange the salmon with the roasted peaches.
Garnish with fresh thyme and serve immediately.
