Mango Chia Pudding


Mango Chia Pudding
Ingredients (1–2 servings)

For the Chia Pudding

  • 3 tbsp chia seeds

  • 1 cup coconut milk (or almond milk, or regular milk)

  • 1–2 tbsp honey or maple syrup

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt (optional, enhances flavor)

For the Mango Layer

  • 1 large ripe mango, diced

  • 1–2 tbsp mango purée (optional for extra flavor)

Toppings

  • Coconut flakes

  • Fresh mint leaves

  • Extra chia seeds

  • Additional diced mango


Instructions


1. Make the Chia Pudding

  1. In a bowl or jar, combine chia seeds, coconut milk, honey, vanilla, and salt.

  2. Stir very well to prevent clumping.

  3. Let sit for 10 minutes, then stir again.

  4. Cover and refrigerate for 2–4 hours, or overnight, until thick and pudding-like.


2. Prepare the Mango

  1. Peel and dice the mango into small cubes.

  2. For a smoother layer, purée a few spoonfuls of mango (optional).


3. Assemble

  1. Spoon the chia pudding into a glass until it fills about 2/3 of the cup.

  2. Add a thick layer of diced mango or mango purée on top.

  3. Sprinkle with coconut flakes and extra chia seeds.

  4. Garnish with a fresh mint leaf.


4. Serve

  • Enjoy immediately or keep chilled for up to 2–3 days.

  • Best served cold.


Tips

  • For extra creaminess, use full-fat coconut milk.

  • Add granola on top for crunch.

  • Mix in yogurt for a thicker texture.
