Mediterranean Grilled Octopus Salad

Ingredients

For the Octopus

  • 1½ lb (700 g) cooked octopus, cut into bite-sized pieces

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp smoked paprika

  • ½ tsp dried oregano

  • Salt and freshly ground black pepper, to taste

For the Salad

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 cup cherry tomatoes, halved

  • ½ cup black olives

  • ¼ cup green olives

  • 2 tbsp capers (optional)

  • 2 tbsp chopped fresh parsley

  • 2 tbsp chopped fresh basil

Lemon Herb Dressing

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 garlic clove, finely minced

  • ½ tsp dried oregano

  • Salt and black pepper, to taste

For Serving

  • Lemon wedges

  • Crusty artisan bread

Instructions

Step 1 – Prepare the Dressing

In a small bowl, whisk together:

  • Olive oil

  • Lemon juice

  • Dijon mustard

  • Garlic

  • Oregano

  • Salt

  • Pepper

Set aside.

Step 2 – Grill the Octopus

Pat the octopus dry.

Toss with:

  • Olive oil

  • Garlic

  • Smoked paprika

  • Oregano

  • Salt

  • Pepper

Heat a grill pan or skillet over medium-high heat.

  • Basil

Add the grilled octopus.

Garnish with extra parsley and lemon wedges.
