Mediterranean Tortellini Pasta Salad

Instructions

1. Cook the Tortellini

  1. Bring a pot of salted water to a boil.

  2. Add tortellini and cook according to package instructions (usually 3–5 minutes).

  3. Drain and rinse with cold water to stop cooking.

  4. Transfer to a large mixing bowl.


2. Prepare the Vegetables

  1. Slice cherry tomatoes in half.

  2. Dice the bell pepper.

  3. Slice olives and chop red onion.

  4. Chop basil and parsley.

  5. Add all veggies and herbs to the bowl of tortellini.


3. Make the Dressing

  1. In a small bowl, whisk together:

    • olive oil

    • red wine vinegar or lemon juice

    • pesto (optional)

    • garlic

    • dried oregano

    • honey (optional)

    • salt & pepper

  2. Taste and adjust seasoning if needed.


4. Combine Everything

  1. Pour the dressing over the tortellini and vegetables.

  2. Toss gently to coat evenly.

  3. Let the salad rest for 10–15 minutes so flavors meld.


5. Serve

  1. Garnish with extra basil leaves.

  2. Serve chilled or at room temperature.
