Ingredients
For the Tart Shells

1¼ cups (160 g) all-purpose flour

½ cup (115 g) unsalted butter, cold and cubed

¼ cup (30 g) powdered sugar

1 egg yolk
-
1–2 tbsp ice water
-
¼ tsp salt
-
½ tsp vanilla extract
For the Vanilla Cream Filling

8 oz (225 g) cream cheese, softened
-
½ cup (120 ml) heavy whipping cream
-
¼ cup (50 g) powdered sugar
-
1 tsp vanilla extract
-
½ tsp lemon zest
For the Berry Topping
-
1 cup fresh blackberries
-
½ cup fresh blueberries
-
¼ cup black cherries, pitted (or dark sweet cherries)
-
¼ cup blackberry or blueberry preserves
-
1 tbsp lemon juice
For Garnish
-
¼ cup chopped pistachios
-
Extra fresh blackberries
-
Powdered sugar (optional)
-
Fresh mint leaves (optional)
Instructions

Step 1 – Make the Tart Shells

Preheat the oven to 350°F (175°C).

Combine the flour, powdered sugar, and salt in a bowl.

Cut in the cold butter until the mixture resembles coarse crumbs.

Mix in the egg yolk, vanilla, and just enough ice water to form a dough.

Chill for 30 minutes.

Roll out the dough and line six 4-inch tart pans.

Prick the bottoms with a fork.

Bake for 15–18 minutes, or until lightly golden.

Cool completely.
Step 2 – Prepare the Vanilla Cream

Beat the cream cheese until smooth.

Add the powdered sugar, vanilla, and lemon zest.

In a separate bowl, whip the heavy cream until soft peaks form.

Fold the whipped cream into the cream cheese mixture until light and fluffy.
Step 3 – Prepare the Berry Glaze

Warm the berry preserves with the lemon juice over low heat until smooth.

Allow the glaze to cool slightly.
Step 4 – Assemble

Spoon or pipe the vanilla cream into each cooled tart shell.

Arrange the blackberries, blueberries, and cherries on top.

Brush the berries lightly with the berry glaze for a glossy finish.

Sprinkle generously with chopped pistachios.
Step 5 – Chill
Refrigerate the tartlets for 1–2 hours before serving to allow the filling to set.
