Step 1 – Make the Tart Shells

  1. Preheat the oven to 350°F (175°C).

  2. Combine the flour, powdered sugar, and salt in a bowl.

  3. Cut in the cold butter until the mixture resembles coarse crumbs.

  4. Mix in the egg yolk, vanilla, and just enough ice water to form a dough.

  5. Chill for 30 minutes.

  6. Roll out the dough and line six 4-inch tart pans.

  7. Prick the bottoms with a fork.

  8. Bake for 15–18 minutes, or until lightly golden.

  9. Cool completely.

Step 2 – Prepare the Vanilla Cream

  1. Beat the cream cheese until smooth.

  2. Add the powdered sugar, vanilla, and lemon zest.

  3. In a separate bowl, whip the heavy cream until soft peaks form.

  4. Fold the whipped cream into the cream cheese mixture until light and fluffy.

Step 3 – Prepare the Berry Glaze

  1. Warm the berry preserves with the lemon juice over low heat until smooth.

  2. Allow the glaze to cool slightly.

Step 4 – Assemble

  1. Spoon or pipe the vanilla cream into each cooled tart shell.

  2. Arrange the blackberries, blueberries, and cherries on top.

  3. Brush the berries lightly with the berry glaze for a glossy finish.

  4. Sprinkle generously with chopped pistachios.

Step 5 – Chill

Refrigerate the tartlets for 1–2 hours before serving to allow the filling to set.

Chef's Tips

  • Use cold butter for a crisp, flaky tart shell.

  • Dry the berries thoroughly before assembling to prevent excess moisture.

  • For extra flavor, add a tablespoon of mascarpone to the cream filling.

  • Toast the pistachios for a deeper, nuttier taste.

  • These tartlets are best enjoyed the day they are assembled.
