
One Pot Chicken Caesar Pesto Pasta

Ingredients:

Chicken breast or thighs (1 lb)

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon chili flakes (optional for spice)

1/4 cup basil pesto

3 cloves garlic, minced

8 oz short-cut pasta (sedanini, bow-tie, or pasta of choice)

2 cups whole milk
-
4 oz cream cheese, cubed

1/4 cup Caesar dressing (homemade or store-bought)

1/2 cup grated Parmesan cheese
-
2 cups arugula (or spinach/kale, your choice)

Fresh basil and fresh dill for garnish
Instructions:
1. Cook the Chicken:
- In a large pot or Dutch oven, melt 1 tablespoon of salted butter over medium heat.
- Season the chicken breasts or thighs with onion powder, garlic powder, paprika, and chili flakes (if using). Cook the chicken for about 5-7 minutes per side until golden brown and cooked through. Remove from the pot and set aside to rest. Once slightly cooled, slice the chicken into strips or bite-sized pieces.
2. Cook the Pasta:
- In the same pot, add another tablespoon of butter if needed. Add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the whole milk, bring it to a gentle simmer, and add the short-cut pasta. Stir occasionally to ensure the pasta is evenly cooked. Cook for about 10-12 minutes, or until the pasta is tender and most of the liquid is absorbed.
3. Make the Creamy Sauce:
- Once the pasta is cooked, stir in the cream cheese, Caesar dressing, and basil pesto. Stir until the sauce becomes creamy and well combined. Add Parmesan cheese and stir until the sauce is smooth and the cheese is melted.
4. Combine Chicken and Greens:
- Return the sliced chicken to the pot and toss everything together. Add the arugula (or spinach/kale) and cook for another 2 minutes until the greens are wilted and everything is well combined.
5. Garnish and Serve:
- Remove from heat and garnish with fresh basil and fresh dill for added flavor and freshness. Sprinkle with extra Parmesan cheese if desired.
