This has been explained in various studies where scientists observed that sprouted garlic develops protective compounds against environmental stressors. A research report by expert Jong-Sang Kim and his colleagues in South Korea, published in the journal Agricultural and Food Chemistry, states:
"Plants are highly vulnerable to bacteria, viruses, and insects in the environment. This causes many plants to produce a substance called phytoalexin to protect themselves. This compound fights microorganisms and pests while also offering health benefits to humans."
Researchers also found that garlic extracts from five-day-old sprouts have the strongest antioxidant properties, whereas fresh garlic or newly sprouted garlic has significantly lower anti.oxidant activity.
How to Grow and Eat Sprouted Garlic
Method 1: Select a few large, mature, and healthy garlic bulbs. Take a plastic tray and place a layer of damp cotton or fabric at the bottom. Arrange the garlic bulbs on top with the roots facing downward and the sprouts facing upward. Keep them in a well-ventilated area. Spray the garlic lightly with a misting bottle daily to keep it moist, but avoid overwatering, which can cause rot.
Method 2: Place the garlic bulbs in a small jar and add a thin layer of water, just enough to cover the roots by a few millimeters.
After five days (from the moment the garlic starts sprouting), you can cut the garlic sprouts and use them for cooking.

Just like with green onions, you can trim the garlic sprouts every five days until the garlic bulb is exhausted and no longer sprouts. At that point, you can start a new batch.
