Ingredients

  • 500g all-purpose flour

  • 100g dried shrimp

  • 300g pork meat

  • 200g spring onions

  • 1 piece of ginger

  • 1 spring onion stalk

  • 2 tablespoons soy sauce

  • 1 tablespoon cooking wine

  • 1 tablespoon oyster sauce

  • A pinch of salt

  • A little sesame oil

  • A little vegetable oil

Steps

  1. Prepare the dough: Put 500g of all-purpose flour in a large bowl, gradually add warm water while stirring until the dough begins to form. Then, knead the dough into a smooth ball, cover it with plastic wrap, and let it rest for about 30 minutes. During this resting time, the dough will become softer and more elastic, making it easier to handle when making the dumplings.

  2. Prepare the filling: Clean the pork and chop it into small pieces. Mince the ginger and spring onion and mix them with the minced pork. Add 2 tablespoons of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, a pinch of salt, and a little sesame oil, and stir well in one direction to allow the pork to absorb the seasonings. Clean the dried shrimp, drain it, and mix it into the pork filling. Wash the spring onions, chop them finely, and place them in a bowl. Add a little vegetable oil and stir to prevent the spring onions from releasing water. Then, mix the spring onions into the minced pork mixture, and the filling is ready.

  3. Roll out the dumpling wrappers and make the dumplings: Place the dough on a countertop and roll it into long strips, then cut them into small, evenly sized pieces. Roll each piece into a round wrapper, thicker in the middle and thinner at the edges. Take one wrapper, add a suitable amount of filling, fold it in half, pinch the edges tightly, and shape the dumplings as desired.

  4. Cook the dumplings: Add enough water to a pot and bring it to a boil over high heat. Then, add the dumplings and gently stir with a flat spoon to prevent them from sticking to the pot. Once the water boils again, add a small bowl of cold water and repeat this step 2-3 times until all the dumplings float to the top and become plump. Then, you can take them out and place them on a plate.

When a steaming plate of shrimp dumplings is served, the alluring aroma immediately spreads.
