Instructions

Step 1 – Prepare the Scallops
Pat the scallops completely dry with paper towels.
Season both sides with:
-
Salt
-
Black pepper
-
Paprika (optional)
Let stand for 10 minutes.
Step 2 – Make the Saffron Cream Sauce
-
Melt butter in a saucepan over medium heat.
-
Add garlic and cook for 30 seconds until fragrant.
-
Pour in the white wine and simmer until reduced by half.
-
Stir in the heavy cream and saffron threads.
-
Simmer gently for 5–6 minutes until slightly thickened.
-
Add lemon juice and season with salt and pepper.
Keep warm over very low heat.
Step 3 – Sear the Scallops
Heat olive oil in a large skillet over medium-high heat.
Add the scallops without overcrowding the pan.
Sear for 2–3 minutes per side until deeply golden and just cooked through.
During the final minute, add 1 tablespoon butter and spoon the melted butter over the scallops.
Step 4 – Assemble
Spoon the warm saffron cream sauce into scallop shells or shallow serving dishes.
Arrange three scallops in each shell.
Garnish with:
-
Fresh parsley or chives
-
Extra saffron threads
-
Microgreens
-
Fresh cracked pepper
Serve immediately with lemon wedges.
Chef's Tips
-
Dry scallops thoroughly before cooking to achieve a perfect golden crust.
-
Avoid moving the scallops while searing to develop an even caramelized surface.
-
Do not overcook—scallops should remain tender and slightly translucent in the center.
-
Bloom the saffron in a tablespoon of warm cream or stock before adding it to intensify its flavor and color.
-
Warm the serving shells or plates before plating to keep the sauce silky and hot.
