Ingredients

For the Scallops

  • 12 large sea scallops, side muscle removed

  • 2 tbsp olive oil

  • 1 tbsp unsalted butter

  • Salt and freshly ground black pepper

  • ½ tsp paprika (optional)

For the Saffron Cream Sauce

  • 2 tbsp unsalted butter

  • 2 garlic cloves, minced

  • ½ cup dry white wine (or seafood stock)

  • ¾ cup heavy cream

  • 1 pinch saffron threads

  • 1 tsp lemon juice

  • Salt and freshly ground black pepper, to taste

For Garnish

  • Chopped fresh parsley or chives

  • Extra saffron threads

  • Microgreens (optional)

  • Lemon wedges

Instructions

Step 1 – Prepare the Scallops

Pat the scallops completely dry with paper towels.

Season both sides with:

  • Salt

  • Black pepper

  • Paprika (optional)

Let stand for 10 minutes.

Step 2 – Make the Saffron Cream Sauce

  1. Melt butter in a saucepan over medium heat.

  2. Add garlic and cook for 30 seconds until fragrant.

  3. Pour in the white wine and simmer until reduced by half.

  4. Stir in the heavy cream and saffron threads.

  5. Simmer gently for 5–6 minutes until slightly thickened.

  6. Add lemon juice and season with salt and pepper.

Keep warm over very low heat.

Step 3 – Sear the Scallops

Heat olive oil in a large skillet over medium-high heat.

Add the scallops without overcrowding the pan.

Sear for 2–3 minutes per side until deeply golden and just cooked through.

During the final minute, add 1 tablespoon butter and spoon the melted butter over the scallops.

Step 4 – Assemble

Spoon the warm saffron cream sauce into scallop shells or shallow serving dishes.

Arrange three scallops in each shell.

Garnish with:

  • Fresh parsley or chives

  • Extra saffron threads

  • Microgreens

  • Fresh cracked pepper

Serve immediately with lemon wedges.
