Sticky BBQ Beef Short Ribs with Crispy Shallots

Serves: 4 | Prep Time: 20 minutes | Cook Time: 3 hours | Total Time: 3 hours 20 minutes

Ingredients

For the Short Ribs

  • 3 lbs (1.4 kg) beef short ribs

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

BBQ Glaze

  • 1 cup barbecue sauce

  • ¼ cup beef broth

  • 3 tbsp brown sugar

  • 2 tbsp Worcestershire sauce

  • 2 tbsp soy sauce

  • 2 tbsp balsamic vinegar

  • 3 garlic cloves, minced

  • 1 tsp Dijon mustard

Crispy Shallot Topping

  • 3 large shallots, thinly sliced

  • 1 cup vegetable oil (for frying)

  • Pinch of salt

Fresh Herb Salad

  • 2 cups fresh cilantro

  • 1 cup parsley leaves

  • 2 green onions, sliced

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

Instructions

Step 1 – Prepare the Ribs

Preheat the oven to 325°F (165°C).

Pat the short ribs dry and season with:

  • Salt

  • Black pepper

  • Smoked paprika

  • Garlic powder

  • Onion powder

Heat olive oil in a large Dutch oven or oven-safe skillet over medium-high heat.

Sear the ribs for 2–3 minutes per side, until deeply browned.

Remove and set aside.

Step 2 – Make the BBQ Glaze

In the same pan, combine:

  • Barbecue sauce

  • Beef broth

  • Brown sugar

  • Worcestershire sauce

  • Soy sauce

  • Balsamic vinegar

  • Garlic

  • Dijon mustard

Simmer for 3–5 minutes, stirring until smooth.

Step 3 – Braise

Return the ribs to the pan and coat them with the sauce.

Cover tightly and bake for 2½–3 hours, or until the meat is fork-tender and nearly falling off the bone.

Remove the lid during the final 20 minutes to allow the sauce to thicken into a glossy glaze.

Step 4 – Make the Crispy Shallots

Heat vegetable oil to 350°F (175°C).

Fry the sliced shallots in batches for 2–3 minutes, until golden brown.

Transfer to paper towels and season lightly with salt.

Step 5 – Prepare the Herb Salad

Toss together:

  • Cilantro

  • Parsley

  • Green onions

  • Olive oil

  • Lemon juice

  • Salt

  • Pepper

Step 6 – Serve

Arrange the glazed short ribs on a serving platter.

Top generously with the fresh herb salad and crispy shallots.

Spoon extra BBQ sauce over the ribs before serving.

Chef's Tips

  • Bone-in short ribs provide the richest flavor.

  • Make the ribs a day ahead—the flavor deepens overnight.

  • If the sauce becomes too thick, stir in a splash of beef broth.

  • Homemade barbecue sauce works beautifully for a more personalized flavor.

  • Crispy shallots should be added just before serving to maintain their crunch.

Serving Suggestions

Serve with:

  • Creamy mashed potatoes

  • Buttered mashed sweet potatoes

  • Grilled corn on the cob

  • Roasted vegetables

  • Coleslaw

  • Warm crusty bread
