Sweet-Heat Cherry Tomatoes over Creamy Whipped Feta



Ingredients

For the Sweet-Heat Cherry Tomatoes:

  • 2 cups cherry tomatoes, halved

  • 1 tablespoon olive oil

  • 1 tablespoon honey (or maple syrup)

  • 1 teaspoon chili flakes (adjust to taste)

  • 1 clove garlic, minced

  • Salt and black pepper to taste

For the Creamy Whipped Feta:

  • 8 oz (225 g) feta cheese, crumbled

  • 1/2 cup Greek yogurt (or sour cream)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced (optional, for extra flavor)

  • Black pepper, to taste

For Serving (optional):

  • Toasted bread or pita

  • Fresh basil or mint

  • Extra honey or chili flakes

Instructions

1. Prepare the Sweet-Heat Tomatoes

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.

  2. Add the minced garlic and sauté for 30 seconds until fragrant.

  3. Add the halved cherry tomatoes and cook for 2–3 minutes until they begin to soften.

  4. Drizzle in the honey and sprinkle in the chili flakes.

  5. Season with salt and pepper and cook for another 2–3 minutes until the tomatoes become glossy and slightly saucy.

  6. Remove from heat and set aside.


2. Make the Whipped Feta

  1. In a food processor or blender, add:

    • Feta

    • Greek yogurt

    • Olive oil

    • Lemon juice

    • Optional garlic

  2. Blend for 1–2 minutes until completely smooth, creamy, and spreadable.

  3. Taste and adjust with extra lemon juice or black pepper if needed.

3. Serve

1.  Spread the whipped feta onto a plate or shallow bowl.

2.  Spoon the warm sweet-heat cherry tomatoes over the center.

3.  Garnish with:

-  Fresh basil or mint

-  A drizzle of honey

-  Extra chili flakes

Serve with toasted bread, crusty baguette, warm pita, or crunchy crackers.
