According to the U.S. Centers for Disease Control and Prevention, vegetables like spinach, cabbage, broccoli, carrots, and celery contain high levels of nitrates. If left too long, bacteria break down the nitrates into nitrites, which are carcinogenic. Reheating won’t eliminate the danger, so it’s best to avoid eating vegetables left overnight.

Pickled vegetables top the "blacklist" of cancer-causing foods, according to the WHO. While occasional consumption might not pose a big risk, regularly eating pickled vegetables or consuming them in large amounts is dangerous, especially if they are pickled improperly or left too long. These vegetables also produce nitrites, which can lead to serious health problems like digestive disorders, immune suppression, poisoning, and increase the risk of diabetes, heart disease, cancer, and even death. Symptoms of nitrite poisoning include fatigue, nausea, cyanosis, restlessness, coma, liver and kidney failure, and respiratory failure.
