Cassava is a staple food for hundreds of millions of people around the world. Known by names such as yuca, manioc, mandioca, and tapioca root, this starchy tuber is especially important across Africa, South America, Asia, and parts of the Caribbean.
It can be boiled, fried, baked, fermented, dried into flour, or processed into tapioca.
Yet cassava also has a surprising—and potentially dangerous—side.
Raw or improperly processed cassava can release cyanide compounds into the body.
This fact has earned cassava dramatic online nicknames such as “the world's deadliest food.” But that description needs context. Properly processed cassava has been consumed safely for generations, while the real danger arises primarily from incorrect preparation, high-cyanide varieties, or chronic reliance on inadequately processed cassava.
Here's what everyone who eats cassava should understand.
Cassava naturally contains compounds known as cyanogenic glycosides, particularly linamarin and lotaustralin.
These substances are part of the plant's natural defense system.
When cassava tissue is damaged—for example, by cutting, crushing, chewing, or grating—chemical reactions can ultimately release hydrogen cyanide.
Cyanide is highly toxic because it interferes with cells' ability to use oxygen effectively.
This does not mean that eating a properly prepared serving of cassava gives someone cyanide poisoning.
The amount of potentially releasable cyanide varies greatly depending on the cassava variety, growing conditions, processing method, and preparation.

Headache, dizziness, weakness, nausea, vomiting, confusion, difficulty breathing, abnormal heart function, seizures, loss of consciousness, and—in severe cases—death.
Symptoms after eating suspected improperly prepared cassava should therefore not be dismissed.
Severe poisoning is a medical emergency.
The severity depends on multiple factors, including the amount consumed, cyanide concentration, body size, nutritional status, and how the cassava was processed.
This is where viral headlines need caution.
It is difficult to establish a reliable global annual death count from cassava poisoning.
Cases may occur in regions where surveillance and laboratory confirmation are limited, and outbreaks can be influenced by drought, famine, conflict, food shortages, and inadequate processing.
Therefore, a precise statement such as “cassava kills more than 200 people every year” shouldn't be treated as a universally established annual statistic without a specific authoritative source and methodology.
What is well established is that improperly processed cassava can cause cyanide poisoning, and outbreaks have occurred.
There is also another serious problem associated with long-term exposure.
