Properly processed cassava has been consumed safely for generations, while the real danger arises primarily from incorrect preparation, high-cyanide varieties, or chronic reliance on inadequately processed cassava.

Here's what everyone who eats cassava should understand.

What Makes Cassava Potentially Toxic?

Cassava naturally contains compounds known as cyanogenic glycosides, particularly linamarin and lotaustralin.

These substances are part of the plant's natural defense system.

When cassava tissue is damaged—for example, by cutting, crushing, chewing, or grating—chemical reactions can ultimately release hydrogen cyanide.

Cyanide is highly toxic because it interferes with cells' ability to use oxygen effectively.

This does not mean that eating a properly prepared serving of cassava gives someone cyanide poisoning.

The amount of potentially releasable cyanide varies greatly depending on the cassava variety, growing conditions, processing method, and preparation.
