After investigating their daily habits and diet, doctors discovered that the cause might be linked to a very common food often found on the family dining table.
Mr. Ngo, a man in his 50s living in Beijing, China, began experiencing persistent coughing, difficulty swallowing, and a noticeable lump in his neck. Concerned about his symptoms, he went to the hospital for a medical examination.
After tests and imaging scans, doctors diagnosed him with stage-3 thyroid cancer. The diagnosis shocked both him and his family.
During further consultation, doctors asked detailed questions about the family’s eating habits and lifestyle. Suspecting that diet might be a factor, they recommended that other family members undergo medical screening as well.
The results were alarming: Mr. Ngo’s wife and one of his children were also diagnosed with thyroid cancer, though at earlier stages.

Because of their busy schedule, the family preferred preparing large batches of pickled vegetables at home. The dish was convenient, inexpensive, and always ready to serve with meals. However, doctors explained that eating excessive amounts of pickled foods may pose health risks.

Health experts emphasize that vegetables themselves are healthy foods, but the way they are prepared and consumed matters greatly.
While pickling can help preserve food and enhance flavor, relying heavily on pickled vegetables as a regular part of daily meals may not be beneficial for long-term health.
