Rub a piece of raw ginger all over the bottom and sides of the pan, always make sure the oil is boiling before putting food in the pan... this will help prevent food from sticking.
Ingredients such as fish, tofu, eggs, rice flour, wheat flour, potatoes... are all very easy to stick to the pan. However, it is not necessary to use non-stick pots and pans, you will not make food stick to the pan if you know how to apply the following bullet points:
1. General requirements
- First, make sure the pan is clean and scratch-free. Note when washing the pan, do not use metal pot and pan scrubbers. If food is stuck to the pan, pour hot water into the pan and soak for a while, so that the food softens and falls apart.
- Second, make sure the surface of the food is dry and not too cold. If the food has just been taken out of the freezer, let it wait at room temperature. Because food with water will reduce the temperature of the frying oil and increase the possibility of sticking to the pan. Pat the surface of the food to release all the water. If it is fish, you can make a small cut under the skin of the fish to let the water flow out.
- Third, make sure the oil is hot enough. You have two ways, put the pan on the stove, wait for the pan to heat up and then pour in the oil, or just let the pan dry and pour in the oil to heat it up. When the oil is hot enough, then put the food in to fry.
To know if the oil is hot enough, dip the cooking chopsticks into the pan of oil. If you hear a sizzling sound and see small bubbles breaking around the chopsticks, it means the oil is boiling and you can put the food in. Don't wait for the oil to smoke because the smoke is too hot, which can easily burn the food.
- Fourth, wait until the food is cooked enough before flipping it to prevent it from sticking to the pan. The food will be cooked enough when it starts to give off a characteristic aroma.
- Fifth, use a shovel to flip the food when it is cooked enough. Note, do not use a shovel or metal chopsticks to rub against the surface of the pan to avoid scratching the pan.
2. Small tips
- Use ginger: After the pan is dry, before pouring oil into the pan, rub a slice of raw ginger on the entire bottom and sides of the pan. Raw ginger and grease combined will create a slippery film that prevents food from sticking to the pan.
- Use wine or vinegar: Instead of rubbing ginger, you can also add a few drops of red wine (or a little vinegar), spread evenly over the pan after the pan is hot, then add oil, wait for the oil to boil before putting the food in to fry.
- If you want the food to not stick to the pan, before frying it, fry an egg first (make sure to only put the egg in the pan after the oil has boiled).
3. Notes
If while frying, the food accidentally sticks to the pan, you can fix it by the following method: Turn off the stove, tilt the pan so that the oil tilts to one side, wait for the pan to cool, the food will come off by itself, then use a spatula to flip it over.
- As for salted fish, before frying, wash it with water, wait for it to dry, then put it in the pan.
