When shopping for pork, you should be aware of certain signs to avoid meat that contains banned substances, particularly lean meat agents.
The Dangers of Lean Meat Additives
Today, pork is one of the most widely consumed meats in Asia. However, many farms illegally use banned chemicals to produce leaner meat before selling it on the market.
One such substance is Salbutamol, a Beta-Agonist, which has been banned by the World Health Organization (WHO) and the Food and Agriculture Organization (FAO) for many years. Despite this, authorities continue to detect significant amounts of these substances in livestock farming, causing concern among consumers.
Luckily, there are several ways to recognize pork containing lean meat agents using visual inspection.
Signs of Pork Contaminated with Growth Stimulants
1. Smell
- Chemical-fed pork often has a stronger, fishy odor compared to clean pork.
2. F.at Layer
- Pork raised with lean meat agents usually has a thin, loose fat layer, often less than 1 cm thick.
- The lean meat tightly attaches to the skin, creating an unnatural appearance.
- If the meat is nearly all lean and the fat and lean layers are separated, it is not safe to buy.
3. Color
- Pork from chemically-fed pigs often appears dark red or purplish-black instead of the usual fresh pink color.
- Some pigs raised with banned substances may show dark red patches on the skin, especially around joints or elbows.
4. Texture and Moisture
- Contaminated pork is often drier and firmer, with less elasticity.
- It may appear swollen or waterlogged, with excess liquid oozing out when cut.
- When sliced, a yellowish liquid may seep out, indicating chemical residues.
- A simple test: If you cut a thick slice (3–4 cm) and it cannot stand upright, it may have been fed growth stimulants.
5. Cooking Characteristics
- When boiled, chemically-fed pork produces a lot of foam and the broth has an unpleasant odor.
- When stir-fried, it releases excess water and tastes dry and tough.
