Chapter 2: Why Chicken Can Become Dangerous
Chicken is a nutritious source of protein, but it can also harbor bacteria such as Salmonella and Campylobacter. These microorganisms may not change the smell, taste, or appearance of food, making contamination difficult to detect.
One of the biggest problems is improper storage. Poultry left at unsafe temperatures for too long creates an environment where bacteria can multiply rapidly. Even cooked chicken can become unsafe if it is stored incorrectly after preparation.
Cross-contamination is another major concern. If raw chicken juices come into contact with vegetables, cooked foods, utensils, or kitchen surfaces, harmful bacteria can spread without anyone noticing. Health authorities repeatedly stress the importance of keeping raw poultry separate from ready-to-eat foods.
The frightening reality is that a meal can look completely normal while still carrying dangerous pathogens.
