However, food safety experts warn that not every part of a fish is suitable for consumption. Certain organs can accumulate bacteria, toxins, or harmful waste products that may pose health risks if eaten.
According to food safety specialists, three fish parts deserve special attention when preparing meals. While proper cleaning and cooking reduce many risks, these organs are generally recommended for removal before the fish is cooked.
The gallbladder is considered the most important part to avoid.
In some places, people mistakenly believe that eating a fish's gallbladder can improve eyesight or provide health benefits. However, there is no reliable scientific evidence supporting these claims.
Instead, the gallbladder contains bile and may also hold naturally occurring substances that can be harmful if consumed. In some species, toxins present in the gallbladder have been linked to poisoning and, in severe cases, kidney injury or liver damage.
If the gallbladder accidentally bursts while cleaning the fish, rinse the affected area thoroughly. The safest approach is to remove the gallbladder intact and discard it immediately.
The gills help fish breathe by constantly filtering large volumes of water. Because of this role, they can collect mud, parasites, microorganisms, and environmental contaminants.
Food safety experts note that fish gills are not typically eaten because they can harbor bacteria and other unwanted materials. If they are not removed before cooking, they may affect both food safety and flavor.
When preparing fresh fish, remove the gills completely and wash the fish thoroughly under clean running water.
The intestines are another part that should not be eaten unless they have been cleaned extremely carefully.
As part of the digestive system, the intestines naturally contain food residue, bacteria, and waste. If the fish is not cleaned properly, these microorganisms can contaminate the edible meat during preparation.
In addition to bacteria, fish caught in polluted waters may accumulate contaminants in their digestive tract. Although thorough cooking destroys many microorganisms, it does not necessarily eliminate every harmful substance that may be present.

Fish remains one of the healthiest protein sources when prepared correctly. However, experts recommend avoiding the gallbladder, gills, and intestines because these parts are more likely to contain toxins, bacteria, or contaminants. Proper cleaning before cooking is a simple step that can help make your seafood meals both safer and more enjoyable.
