Chapter 2: Your Liver Works Harder Than You Think

The liver is one of the body's most important metabolic organs. Located in the upper-right portion of the abdomen, it performs hundreds of functions that help maintain normal health.

It processes nutrients absorbed from food, stores certain vitamins and minerals, produces bile, helps regulate blood glucose, metabolizes medications, and transforms many potentially harmful substances into compounds that can eventually be eliminated.

Because the liver processes so many substances, long-term exposure to certain toxins can place significant stress on it.

But this does not mean that every substance described as “toxic” is automatically dangerous at ordinary dietary levels. Toxicology depends on several factors, including dose, duration, route of exposure, individual susceptibility, and whether the substance accumulates in the body.

This is why the phrase “the dose makes the poison” is so important when discussing food safety.

Some plants naturally contain compounds that can be harmful in sufficiently large quantities. Other risks arise because food is improperly stored, contaminated, spoiled, or prepared incorrectly. In certain circumstances, cooking can reduce some risks, while in others, cooking may not completely eliminate the problem.

For this reason, people should be cautious about viral posts that provide a dramatic warning without identifying the exact vegetable, chemical compound, dose, preparation method, and scientific evidence involved.

A photograph of a sick patient cannot establish that a particular food caused the illness.

Likewise, developing liver cancer after eating a food does not automatically mean the food caused the cancer.
