Raw vegetables are healthy—but a few popular choices may hide unwanted parasites.
Fresh vegetables are an essential part of a healthy diet, providing vitamins, minerals, antioxidants, and fiber. However, many people don't realize that some commonly eaten vegetables are more likely to harbor parasite eggs, larvae, or tiny insects—especially when consumed raw or cleaned improperly.
The good news is that you don't have to stop eating these nutritious foods. With proper washing and preparation, you can greatly reduce the risk while still enjoying their health benefits.
Garland chrysanthemum has dense, deeply divided leaves that create many small hiding places for parasite eggs and insect larvae. The junctions between the stems and leaves are particularly difficult to clean, making them common spots where aphids and other tiny pests remain attached.
If you enjoy this leafy vegetable in salads or hot pots, rinse every leaf carefully under running water before cooking or serving.
Lotus root grows underwater, and its hollow tunnels provide an ideal environment for mud, microorganisms, and parasites such as flukes to accumulate. These natural cavities are difficult to clean without proper preparation.
Before cooking, peel the lotus root thoroughly and rinse each hole under running water. Soaking the slices briefly in salted water can help remove dirt trapped inside the tunnels.
Broccoli's tightly packed florets are excellent at trapping dust, tiny insects, and parasite eggs. A quick rinse under the tap is often not enough because contaminants can remain hidden deep within the flower buds.
To clean broccoli more effectively, separate it into smaller florets and soak them in water mixed with a little salt for about 15 minutes. After soaking, rinse thoroughly under clean running water before cooking.
Coriander's fragrant leaves attract many insects during cultivation, while its roots often retain soil that may contain nematodes and other microorganisms. Many people simply trim off the roots and give the leaves a quick rinse, but this may not remove all contaminants.
For safer preparation, cut away at least 2–3 cm of the root, separate the stems, and wash each bunch carefully under flowing water.
Avoid simply dipping vegetables into a bowl of water. Instead, hold them under running water for at least 30 seconds while gently rubbing the leaves and stems. This helps remove dirt and parasite eggs that cling to the surface.
Prepare a basin of clean water and add about 2 tablespoons of salt or half a cup of white vinegar. Soak vegetables for approximately 15 minutes before giving them a final rinse. This simple step helps loosen dirt and reduce the number of insects hiding among the leaves.
Heat remains one of the most effective ways to eliminate parasites. Leafy vegetables should be blanched in boiling water for around 10 seconds before further cooking, while root vegetables such as lotus root should be boiled or steamed for at least three minutes. Most parasites cannot survive temperatures above 60°C.

Fresh vegetables remain one of the healthiest foods you can eat, but they should never be consumed without proper cleaning. Spending just a few extra minutes washing, soaking, and preparing vegetables can significantly reduce the risk of unwanted contaminants while allowing you to enjoy all of their nutritional benefits.
