Despite its convenience, one major concern is food safety—especially when it comes to raw dishes. Sushi and sashimi require strict storage conditions, much more so than cooked foods. If not handled properly, they can lose quality or even pose health risks.

Ethan Vu, the owner of an online sushi business, explains: “We always include gel ice packs with sashimi deliveries, or we ask customers about their intended eating time so we can adjust shipping accordingly. This ensures the food remains fresh upon arrival.” Proper storage measures like these help maintain quality and reassure consumers about food safety.


Nutrition Experts Issue a Warning

Many believe that as long as the fish is fresh, sushi and sashimi are safe to eat. However, Dr. Emma Le, a nutrition specialist at Hanoi Medical University, warns that improper handling of raw fish can pose serious health risks—especially when consuming takeout.

“Sushi and sashimi that are not stored at the correct low temperature or are left out too long can lead to food poisoning and cross-contamination. Additionally, if utensils used for eating are not properly sanitized, the risk increases further,” Dr. Le explains.

Is it safe to store sushi in the fridge overnight? Dr. Le advises against it. “Raw foods like sushi and sashimi should be consumed within 24 hours to ensure safety. Signs of spoilage include dull color, an unusual odor, or fish turning slightly greenish.”


Essential Tips for Ordering Sushi and Sashimi Safely

When buying sushi from a restaurant or pre-packaged at a store, keep these points in mind:

Packaging: Ensure the sushi is packed in a sealed container with protective layers to prevent contamination.

Storage Temperature: Sushi should be kept cold with gel ice packs or dry ice during transport.

Shelf Life: Eat pre-packaged sushi immediately—do not store it in the fridge for too long.

Utensil Hygiene: Make sure chopsticks, plates, and knives are properly cleaned to avoid cross-contamination.

Many believe that dipping sashimi in soy sauce and wasabi kills bacteria. However, experts clarify that while it may help slightly, it cannot replace proper food storage and handling.
