Step 1: Dry the Chili

When you buy chili, place it in a basket, rack, or tray to ensure the outer skin stays dry. Moisture on the chili's skin accelerates rotting. Discard any wilted or bruised peppers to avoid contamination.

Step 2: Trim the Stems

Use scissors to shorten the stems of the chili peppers, leaving a small portion near the tip of the fruit. Avoid pulling off the stem entirely, as this can damage the chili and allow bacteria to enter, speeding up spoilage.

Step 3: Store in Plastic Bottles with Cooking Oil

  1. Place the chili peppers in a clean, dry plastic bottle, such as a used mineral water bottle.
