1. Spinach
Spinach is rich in nitrates — beneficial when eaten fresh but can convert into toxic nitrites when reheated multiple times. To stay safe, only cook the amount you’ll eat right away and avoid leftovers.
2. Potatoes
Potatoes left at room temperature or reheated several times can harbor bacteria that cause food poisoning. If you cook too many, divide them into small portions and refrigerate immediately after cooking.
3. Celery and Carrots
Like spinach, celery and carrots contain nitrates that may turn into harmful compounds when reheated. If you must warm up a dish, remove these vegetables first.
