Seasonings: Salt, seasoning powder, monosodium glutamate, fish sauce, sesame oil (a pinch of each)
Instructions:
Clean the chicken feet with salt and lemon juice (1 lemon) to remove any odor. Then, trim the toenails and either cut the feet in half or leave them whole according to your preference.
Wash the black beans thoroughly and discard any floating beans as these are underdeveloped or damaged. Then, roast the beans until fragrant, remove them, let them cool a little, and soak them in a large bowl of hot water for about 4-5 hours so they soften. This will help them cook faster when stewed (or you can put them in a thermos to reduce soaking time by half).
Rinse the glutinous rice, then soak it in hot water for the rice to soften. The soaking time for glutinous rice can be shorter than the black beans.
After the soaking time, start cooking: Add the chicken feet, black beans, and glutinous rice along with 1.2 liters of water (including the water used to soak the beans and rice) into a stew pot. Adjust the seasoning to taste and stew for 1 hour, but make sure to stir every 20 minutes.
When done, the soup will have a thick consistency, rich flavor, and a pleasant aroma. You can serve it with a plate of cucumber on the side for a perfect family meal.
