Snow Fungus is rich in polysaccharides and packed with vitamins A, B, C, E, and protein, which helps enhance the body’s immunity. It also promotes cell regeneration, aids in quick wound healing, and reduces skin irritation. - 100g of cassava flour
- A suitable amount of rose petals
- 10g of snow fungus
- Goji berries or dried chrysanthemum flowers (optional for extra flavor)
- 30-50g of rock sugar (adjust sweetness as desired)
- 800ml of water for cooking the pudding
Instructions for Making Snow Fungus Pudding with Tapioca Pearls and Rose:
Step 1: Rinse the snow fungus under running water, soak it in water for about 2-3 hours until it expands. Then, cut off the base and tear it into small bite-sized pieces. Wash it again and let it drain.
Step 2: Put the cassava flour into a bowl, add the rose petals according to your preference, and mix them well. Then, boil 60g of water and slowly pour it into the bowl, stirring well so that the water is absorbed by the flour, kneading it until you have a smooth dough.
Note: If the rose petals are large, you can tear them into smaller pieces for easier mixing with the flour.
Step 3: Take small portions of the dough and roll them into even balls. Bring a pot of water to a boil and drop the rose tapioca balls into the water. When they rise to the surface, remove them and soak them in a bowl of cooled boiled water.
Step 4: Pour 800ml of water into a pot, add the snow fungus and rock sugar, and cook for about 25 minutes, stirring occasionally. When the snow fungus is nearly cooked, add the tapioca pearls, stir gently, and sprinkle goji berries or dried chrysanthemum flowers on top for decoration.
Note: You can replace rock sugar with brown sugar.
