While such statements are often exaggerated, there is a real food safety concern behind them. Certain foods that are improperly prepared or stored can become contaminated with Bongkrekic acid, a rare but extremely dangerous toxin that cannot be destroyed by normal cooking. Understanding how this toxin forms and how to prevent contamination is far more important than avoiding nutritious foods altogether.
Bongkrekic acid is produced by a bacterium called Burkholderia gladioli pathovar cocovenenans. The toxin has been linked to outbreaks involving fermented coconut products, rice noodles, corn-based foods, and occasionally homemade preparations of soaked wood ear mushrooms or other starch-rich foods that were left at room temperature for extended periods. Once the toxin develops, it is remarkably stable. Boiling, frying, or reheating contaminated food does not reliably destroy it, making prevention the only effective protection.
Symptoms of Bongkrekic acid poisoning usually appear within several hours after eating contaminated food, although the timing may vary depending on the amount consumed. Early signs often include nausea, vomiting, abdominal pain, diarrhea, dizziness, and profound weakness. As the toxin affects the body's ability to produce energy inside cells, severe cases can rapidly progress to liver failure, kidney injury, shock, and multiple organ failure. Because the condition can become life-threatening very quickly, anyone who develops severe symptoms after eating suspicious food should seek emergency medical care immediately.
Fortunately, these poisonings are rare and are almost always associated with improper food handling rather than with the food itself. Fresh, properly prepared wood ear mushrooms are generally considered safe when purchased from reliable sources and cooked according to food safety recommendations. Problems usually arise when ingredients are soaked for many hours at room temperature, stored improperly, or consumed after obvious spoilage.
Food safety experts recommend several simple precautions to reduce risk. Dried mushrooms should be soaked only for the amount of time recommended on the package. After soaking, they should be cooked promptly rather than left sitting on the kitchen counter for many hours. Cooked dishes should be refrigerated within two hours and reheated thoroughly before eating leftovers. Any food with an unusual odor, slimy texture, or visible spoilage should be discarded immediately.
The same principles apply to many other foods. Rice, noodles, cooked beans, fermented products, and starchy dishes can all become hazardous if left at unsafe temperatures that allow bacteria to multiply. Refrigeration slows bacterial growth but does not reverse spoilage that has already occurred. Maintaining good kitchen hygiene, washing hands before food preparation, using clean utensils, and storing foods at appropriate temperatures remain among the most effective ways to prevent foodborne illness.
It is also important to distinguish between sensational social media claims and evidence-based health advice. Statements such as "68 times more toxic than arsenic" often oversimplify complex toxicology and may not accurately reflect real-world exposure. What truly matters is recognizing that Bongkrekic acid is exceptionally dangerous if it forms, but formation itself is preventable through proper food handling.
