How to Choose Fresh Eggplants: Simple Tips You Should Know

Observe the Shape

According to the experience of seasoned eggplant growers, when shopping at the market, it’s best to choose eggplants that are slightly curved. These naturally grown eggplants tend to have gentle curves, each with a different degree of bending — a sign of natural growth and proper development.

In contrast, perfectly straight and evenly shaped eggplants should be avoided. These are often off-season crops or may have been chemically treated to achieve an unnaturally uniform appearance.


Look at the Color

Fresh eggplants usually have a deep, vibrant purple color with a smooth, shiny skin. Their color is evenly distributed, and they feel firm and heavy when held.

Avoid eggplants with dull, brownish, or wrinkled skin, as these signs indicate that the produce is no longer fresh.


Check the Stem Area

At the junction where the stem meets the flesh, you’ll notice a white inner ring. The larger and brighter this white area is, the fresher and sweeter the eggplant will be when cooked.

If that area is small or purplish, it means the eggplant is old and full of seeds, which will make it taste bitter and less enjoyable.




Do the Press Test

When selecting eggplants, gently press the surface with your fingers.

  • If the skin leaves a light indentation that slowly disappears, the eggplant is ripe and fresh.

  • If it feels hard and unyielding, the eggplant is overripe or tough and should be avoided.
