Hours later, he developed severe vomiting, diarrhea, dizziness, and intense abdominal pain. By the time he arrived at the hospital, doctors found signs of acute kidney injury that required immediate treatment.
According to physicians, the most likely cause was poisoning from naturally occurring compounds called cucurbitacins, bitter chemicals that may develop in certain members of the gourd family. These toxins are uncommon but can occur when vegetables are grown under environmental stress or cross-pollinate with wild varieties. Unlike bacteria, cucurbitacins are not destroyed by cooking, boiling, frying, or baking.
Doctors explained that the patient immediately noticed the vegetable tasted unusually bitter. Thinking it was only a difference in flavor, he swallowed a few bites before stopping. Within a few hours, he began vomiting repeatedly and became severely dehydrated. Blood tests later showed that his kidneys were under significant stress due to dehydration and toxin exposure. Fortunately, prompt medical care helped him recover without permanent kidney damage.

Bottle gourd is widely enjoyed in soups, stir-fries, and stews. Under normal conditions, it has a mild, slightly sweet flavor. However, if it tastes intensely bitter, it may contain high levels of cucurbitacins. Health experts advise discarding the entire vegetable immediately.
Zucchini is another vegetable that is generally safe and nutritious. In rare cases, however, unusually bitter zucchini has been associated with poisoning. Even a small amount may trigger severe gastrointestinal symptoms in sensitive individuals.

Purchase vegetables from reliable sources, avoid consuming unusually shaped or damaged gourds, and never force yourself to finish food that has an unexpectedly bitter taste. Trust your senses—bitterness is often nature's warning sign.
Anyone who experiences repeated vomiting, severe diarrhea, confusion, difficulty staying awake, or very little urine after eating a bitter vegetable should seek immediate medical attention.
