What About Garlic That Has Sprouted?

This is one of the most common garlic questions.

You cut open a clove and discover a green shoot running through the center.

Suddenly you wonder:

“Is this garlic poisonous?”

Usually, no.

A green sprout generally means the garlic is older and has started to grow.

Sprouting can affect the flavor and texture, and the green shoot may taste somewhat bitter.

But sprouting by itself does not automatically mean that the garlic is unsafe.

If the clove is still firm, has no mold, and doesn't show signs of decay, it can generally still be used.

Some people prefer to remove the green shoot because of its stronger or more bitter flavor.
