Chapter 2 — The Nutrients That Make Gizzards Interesting

One of the strongest nutritional features of chicken gizzards is their combination of protein and micronutrients.

For people who eat animal products, gizzards can provide a concentrated source of protein without requiring a large serving. Protein helps maintain lean body tissue and plays an important role in countless physiological processes.

Another nutrient that deserves attention is vitamin B12.

Vitamin B12 is naturally found mainly in animal-derived foods. The body needs it for normal red blood cell production, DNA synthesis, and proper neurological function. People who avoid animal products may therefore need to pay particular attention to reliable sources of B12.

Chicken gizzards can also provide iron, which is essential for transporting oxygen throughout the body. Iron deficiency can develop when dietary intake is insufficient or when the body loses iron faster than it replaces it.

However, the amount of iron a person absorbs depends on several factors. The form of iron found in animal foods is generally more readily absorbed than non-heme iron from plant foods, but overall absorption still varies according to an individual's nutritional status and the rest of the meal.

Gizzards also contain zinc, a mineral involved in immune function, wound healing, DNA synthesis, and numerous enzymatic reactions.

Selenium is another trace mineral found in poultry and organ meats. The body requires selenium in relatively small amounts, but it plays important roles in thyroid hormone metabolism and antioxidant defense systems.

These nutrients help explain why organ meats can be nutritionally valuable.

But nutrition is rarely as simple as one food providing everything the body needs.

Chicken gizzards do not provide all vitamins, minerals, fiber, healthy fats, and plant compounds required for a balanced diet. Vegetables, fruits, legumes, whole grains, nuts, seeds, dairy or alternatives, and other protein sources can all contribute different nutrients.

Therefore, the more accurate takeaway is not that gizzards make supplements unnecessary for everyone.

Instead, regularly including nutrient-dense foods such as gizzards may help improve the overall nutrient quality of a diet, particularly when they replace less nutritious foods.

For anyone considering supplements, the decision should depend on diet, age, lifestyle, medical circumstances, laboratory results when appropriate, and professional advice.
