Chapter 4 — How Should Chicken Gizzards Be Prepared?

The nutritional value of a food is only part of the story. Food safety and preparation matter too.

Chicken products, including gizzards, should be handled carefully because raw poultry can carry harmful bacteria. Cross-contamination can occur when raw poultry touches cutting boards, knives, countertops, or ready-to-eat foods.

For that reason, raw gizzards should be kept separate from foods that will not be cooked.

Hands, utensils, and preparation surfaces should be cleaned appropriately after handling raw poultry. The meat should also be cooked thoroughly to a safe internal temperature rather than relying only on its exterior appearance.

Preparation method matters from a nutritional perspective as well.

Gizzards that are heavily breaded and deep-fried can contain considerably more calories and fat than gizzards that are boiled, braised, grilled, or prepared with moderate amounts of oil.

A simple preparation can allow the natural texture and flavor of the meat to remain prominent.

Because gizzards are naturally tough, slow cooking is often useful. Simmering them until tender can make them much easier to eat while allowing them to absorb the flavors of herbs, vegetables, and spices.

They can be combined with nutrient-rich foods such as onions, carrots, leafy vegetables, beans, or whole grains to create a more balanced meal.

Portion size also matters.

Eating a food because it contains useful nutrients does not mean that eating increasingly large amounts will produce increasingly large health benefits. Nutritional adequacy depends on the overall diet.

People with specific dietary restrictions should also consider their individual circumstances. Someone who has been advised to limit particular nutrients or who has a medical condition affecting their diet should discuss organ meats with their healthcare professional rather than following generic social-media advice.

In short, chicken gizzards can be a nutritious food, but safe handling, thorough cooking, sensible portions, and a balanced meal pattern are still important.
