Instead of removing all air, manufacturers replace the air inside the package with carefully controlled gas mixtures. These mixtures may contain oxygen, carbon dioxide, nitrogen, or combinations of several gases.

The purpose is not merely preservation.

It is also presentation.

Certain gas combinations help maintain the bright red appearance consumers prefer, allowing products to retain an attractive look for longer periods.

This practice has become common throughout the food industry.
