Chapter 1: The Mystery Behind the Green Ring
Hard-boiled eggs are a staple in many households because they are affordable, nutritious, and easy to prepare. Yet few kitchen discoveries create as much confusion as the appearance of a green ring surrounding the yolk.
Many people worry that the discoloration means the egg is spoiled. Others believe it may indicate contamination or poor quality. In reality, the green ring is usually the result of a natural chemical reaction that occurs during cooking.
When eggs are boiled for too long or cooked at excessively high temperatures, sulfur in the egg white reacts with iron in the yolk. This reaction creates a harmless compound called ferrous sulfide, which appears as a greenish-gray layer around the yolk.
The good news is that this color change generally does not mean the egg is unsafe to eat. In most cases, it is simply a sign that the egg was overcooked.
