Greek Orzo Salad



Ingredients:

For the Salad:

  • 1 1/2 cups orzo pasta (uncooked)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, thinly sliced

  • 1/2 cup Kalamata olives, pitted and halved

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • 1 tablespoon fresh dill (optional)

For the Dressing:

  • 3 tablespoons extra-virgin olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • 1/2 teaspoon garlic powder (optional)

Instructions:

1. Cook the Orzo:

  • Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions, usually about 7-9 minutes.

  • Drain the orzo and rinse with cold water to stop the cooking process. Set aside to cool completely.

2. Prepare the Vegetables:

  • While the orzo is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and pit and halve the olives.

3. Make the Dressing:

  • In a small bowl or jar, combine the olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, garlic powder, salt, and pepper.

  • Whisk together until well combined and the dressing emulsifies.

4. Assemble the Salad:

  • In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley (and dill, if using).

  • Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.

5. Serve:

  • Serve the Greek Orzo Salad immediately or refrigerate for 30 minutes to let the flavors meld together. It can be served cold or at room temperature.

  • Garnish with extra feta cheese or parsley, if desired.

Tips:

  • Customize the veggies: Feel free to add or swap in your favorite salad ingredients like bell peppers, roasted red peppers, or spinach.

  • Add protein: For a more filling salad, you can add grilled chicken, shrimp, or chickpeas.

  • Make ahead: This salad can be made a few hours in advance, allowing the flavors to develop even more.
