
Greek Orzo Salad

Ingredients:
For the Salad:

1 1/2 cups orzo pasta (uncooked)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 tablespoon fresh dill (optional)
For the Dressing:

3 tablespoons extra-virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon lemon juice
-
1 teaspoon Dijon mustard

1 teaspoon dried oregano
-
Salt and pepper to taste

1/2 teaspoon garlic powder (optional)
Instructions:
1. Cook the Orzo:

Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions, usually about 7-9 minutes.

Drain the orzo and rinse with cold water to stop the cooking process. Set aside to cool completely.
2. Prepare the Vegetables:

While the orzo is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and pit and halve the olives.
3. Make the Dressing:

In a small bowl or jar, combine the olive oil, red wine vinegar, lemon juice, Dijon mustard, dried oregano, garlic powder, salt, and pepper.

Whisk together until well combined and the dressing emulsifies.
4. Assemble the Salad:

In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley (and dill, if using).

Pour the dressing over the salad and toss gently to combine, ensuring everything is well coated.
5. Serve:

Serve the Greek Orzo Salad immediately or refrigerate for 30 minutes to let the flavors meld together. It can be served cold or at room temperature.
