Before learning how to preserve them, it's important to understand why avocados spoil quickly. When exposed to air, the enzyme polyphenol oxidase in the fruit reacts with oxygen, causing oxidation. This results in the avocado flesh turning brown, losing its appeal and flavor. Additionally, overripe avocados or those stored improperly can become soft, watery, and affect your enjoyment.

Effective preservation starts with selection. When buying, prioritize firm avocados with green skin, free from cracks or bruises. Unripe avocados last longer than soft, fully ripe ones. If you plan to use it immediately, choose avocados with slightly dark skin that yield a little when pressed but don't feel mushy.
A small tip is to check the avocado stem: if it peels off easily and the flesh underneath is light green, it’s a good quality avocado suitable for storage. Conversely, if the flesh beneath the stem is brown, the avocado may be overripe or close to spoiling.
For unripe avocados, the simplest storage method is to keep them in a cool, ventilated place away from direct sunlight. The ideal temperature is between 20-25°C (68-77°F). Avoid storing avocados in sealed plastic bags, as this traps ethylene gas and accelerates ripening and spoilage.
If you want to slow down ripening, place avocados in the refrigerator’s crisper drawer. Temperatures around 5-7°C (41-45°F) can slow the ripening process, keeping avocados fresh for 2-3 weeks longer. However, wrap them in newspaper or keep them in a container to prevent odor absorption from other foods.

Ripe avocados need careful handling to avoid browning and softening. If not consumed immediately, store ripe avocados in the refrigerator. Before refrigerating, wrap them in plastic wrap or place them in a zip-lock bag to limit air exposure. This can keep them fresh for about 3-5 days.
A crucial note is not to leave ripe avocados at room temperature for too long. High temperatures speed up decomposition, causing the fruit to soften and lose its creamy taste quickly.
Cut avocados are the hardest to preserve because the flesh is directly exposed to air and oxidizes quickly. To prevent browning, try these tips:

Use Lemon Juice: The citric acid in lemon slows oxidation. After cutting, brush a thin layer of lemon juice on the exposed avocado flesh, then wrap tightly in plastic wrap and refrigerate. This keeps the avocado fresh for 1-2 days with minimal impact on flavor.
Use Onion: Place a few slices of onion in the container with the cut avocado. The sulfur compounds in onions help slow oxidation and maintain the avocado’s green color. Make sure the avocado and onion do not touch directly to avoid odor transfer.
Wrap Properly: If you don’t have lemon or onion, wrap the avocado tightly in plastic wrap, ensuring no air leaks in. Put it in an airtight container before refrigerating for better preservation.
If you want to keep avocados even longer, freezing is an option. Follow these steps:
Peel and pit the avocado.
Mash the flesh or cut it into small pieces.
Add a bit of lemon juice to prevent browning.
Place the avocado in a zip-lock bag or airtight container, removing as much air as possible.
Freeze for 3-6 months.
To use, thaw the avocado overnight in the refrigerator. Frozen avocado is best suited for smoothies, salad dressings, or sauces rather than eating fresh, as the texture may change.

Do not store avocados near ethylene-producing fruits like apples or bananas, as this speeds ripening.
Do not store avocados submerged in water, as this causes them to absorb water, lose flavor, and spoil faster.
Avoid storing avocados in high humidity environments, which encourage bacteria and mold growth.
