300ml heavy whipping cream (cold)
120g powdered sugar
1 tsp vanilla extract
2 tbsp lemon juice
10g gelatin + 3 tbsp warm water
(or 8g gelatin sheets hydrated in cold water)
Assorted fresh fruits such as:
Strawberries
Mango
Kiwi
Pineapple
Berries
Optional: apricot or mango glaze (for shine)

Crush biscuits until fine.
Mix crumbs with melted butter (and sugar if using).
Press firmly into the bottom of a springform pan (18–20 cm).
Chill in the fridge for at least 20 minutes.
Mix gelatin with warm water until dissolved.
Let cool slightly (still liquid, not set).
Beat softened cream cheese with powdered sugar, lemon juice, and vanilla until smooth.
In another bowl, whip cold heavy cream until medium-stiff peaks form.
Fold the whipped cream gently into the cream cheese mixture.
Pour in the melted gelatin and fold quickly and evenly.
Optional: add small diced fruits inside the filling (like mango or kiwi).
Pour the filling over the chilled crust.
Smooth the top with a spatula.
Refrigerate for 6 hours, preferably overnight, until fully set.
Slice and arrange fruits on top in a full, abundant layer.
Optional: brush with a light fruit glaze (apricot or gelatin glaze) for shine and protection.
Add whipped cream swirls around the edges if desired.
Carefully remove cheesecake from the mold.
Slice with a hot knife for clean edges.
