Fresh Fruit Cheesecake

Ingredients

For the Crust

  • 200g digestive biscuits or graham crackers

  • 80g melted butter

  • 1 tbsp sugar (optional)

For the Cheesecake Filling

  • 400g cream cheese (softened)

  • 300ml heavy whipping cream (cold)

  • 120g powdered sugar

  • 1 tsp vanilla extract

  • 2 tbsp lemon juice

  • 10g gelatin + 3 tbsp warm water
    (or 8g gelatin sheets hydrated in cold water)

For the Fruit Topping

Assorted fresh fruits such as:

  • Strawberries

  • Mango

  • Kiwi

  • Pineapple

  • Berries

  • Optional: apricot or mango glaze (for shine)


Instructions

1. Prepare the Crust

  1. Crush biscuits until fine.

  2. Mix crumbs with melted butter (and sugar if using).

  3. Press firmly into the bottom of a springform pan (18–20 cm).

  4. Chill in the fridge for at least 20 minutes.


2. Prepare the Gelatin

  1. Mix gelatin with warm water until dissolved.

  2. Let cool slightly (still liquid, not set).


3. Make the Cheesecake Filling

  1. Beat softened cream cheese with powdered sugar, lemon juice, and vanilla until smooth.

  2. In another bowl, whip cold heavy cream until medium-stiff peaks form.

  3. Fold the whipped cream gently into the cream cheese mixture.

  4. Pour in the melted gelatin and fold quickly and evenly.

  5. Optional: add small diced fruits inside the filling (like mango or kiwi).


4. Assemble the Cheesecake

  1. Pour the filling over the chilled crust.

  2. Smooth the top with a spatula.

  3. Refrigerate for 6 hours, preferably overnight, until fully set.


5. Add Fresh Fruit Topping

  1. Slice and arrange fruits on top in a full, abundant layer.

  2. Optional: brush with a light fruit glaze (apricot or gelatin glaze) for shine and protection.

  3. Add whipped cream swirls around the edges if desired.


6. Serve

  1. Carefully remove cheesecake from the mold.

  2. Slice with a hot knife for clean edges.

  3. Serve chilled.
