
Veggie Casserole with Cauliflower and Broccoli

Ingredients:

1 medium head of cauliflower, cut into florets

1 medium head of broccoli, cut into florets

1 small onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese (optional for topping)

1/2 cup breadcrumbs (optional for topping)

1 cup heavy cream or milk

1/4 cup grated Parmesan cheese

2 tablespoons butter

2 tablespoons all-purpose flour

Salt and pepper to taste

1/2 teaspoon paprika (optional for extra flavor)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Blanch the Vegetables:
Bring a large pot of salted water to a boil. Add the cauliflower and broccoli florets and cook for about 3-4 minutes until slightly tender but still firm. Drain and set aside.
3. Prepare the Sauce:
In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté for about 2-3 minutes until fragrant and the onion softens.
4. Make the Cream Sauce:
Add the flour to the onion and garlic mixture, stirring well to combine. Cook for about 1 minute. Gradually add the heavy cream (or milk), whisking continuously to prevent lumps. Cook for another 2-3 minutes until the sauce thickens.
5. Add Cheese and Seasoning:
Stir in the Parmesan cheese and paprika (if using), and season with salt and pepper to taste. Mix until the cheese is melted and the sauce is smooth.

6. Combine Vegetables and Sauce:
Add the cooked cauliflower and broccoli to the saucepan, gently stirring to coat the vegetables with the creamy sauce.
7. Assemble the Casserole:
Transfer the vegetable and sauce mixture into a greased 9x9-inch baking dish. Top with shredded cheddar cheese and breadcrumbs (if using) for a crispy topping.
8. Bake:
Bake the casserole in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
9. Serve:
