Crispy Chicken Caprese
Ingredients
For the chicken cutlets
-
2 large chicken breasts (sliced into thin cutlets)
-
Salt & black pepper
-
1 cup flour
-
2 eggs, beaten
-
1½ cups breadcrumbs (Italian breadcrumbs preferred)
-
3–4 tbsp olive oil (or more for frying)
For the Caprese topping
-
1 cup cherry tomatoes, halved
-
1 ball fresh mozzarella, sliced
-
¼ cup basil pesto
-
Fresh basil leaves, thinly sliced
For garnish
-
Balsamic glaze (store-bought or homemade)
-
Extra virgin olive oil
Instructions

1. Prepare the chicken cutlets
-
Season chicken cutlets with salt and pepper.
-
Prepare a breading station:
-
Plate 1: flour
-
Plate 2: beaten eggs
-
Plate 3: breadcrumbs
-

Dredge each cutlet in flour → dip in egg → coat in breadcrumbs.
-
Heat olive oil in a pan over medium heat.
-
Pan-fry chicken for 3–4 minutes per side until golden and crispy.
-
Place them on paper towels to remove excess oil.
2. Add mozzarella & melt
-
While the chicken is still warm, place slices of mozzarella on top.
-
Either cover with a lid for 1–2 minutes or place under a broiler to melt.
3. Prepare the tomato topping
-
In a bowl, combine cherry tomatoes, a drizzle of olive oil, salt, pepper, and sliced basil.

Toss gently.
4. Assemble the dish
-
Spread pesto over the melted mozzarella on each cutlet.
-
Add the cherry tomato mixture on top.
-
Drizzle balsamic glaze over the entire plate.
5. Serve
-
Serve immediately while the chicken is crispy and the toppings fresh.

Pairs perfectly with salad, pasta, or roasted vegetables.
