Crispy Chicken Caprese

Ingredients

For the chicken cutlets

  • 2 large chicken breasts (sliced into thin cutlets)

  • Salt & black pepper

  • 1 cup flour

  • 2 eggs, beaten

  • 1½ cups breadcrumbs (Italian breadcrumbs preferred)

  • 3–4 tbsp olive oil (or more for frying)

For the Caprese topping

  • 1 cup cherry tomatoes, halved

  • 1 ball fresh mozzarella, sliced

  • ¼ cup basil pesto

  • Fresh basil leaves, thinly sliced

For garnish

  • Balsamic glaze (store-bought or homemade)

  • Extra virgin olive oil


Instructions

1. Prepare the chicken cutlets

  1. Season chicken cutlets with salt and pepper.

  2. Prepare a breading station:

    • Plate 1: flour

    • Plate 2: beaten eggs

    • Plate 3: breadcrumbs

  3. Dredge each cutlet in flour → dip in egg → coat in breadcrumbs.

  4. Heat olive oil in a pan over medium heat.

  5. Pan-fry chicken for 3–4 minutes per side until golden and crispy.

  6. Place them on paper towels to remove excess oil.

2. Add mozzarella & melt

  1. While the chicken is still warm, place slices of mozzarella on top.

  2. Either cover with a lid for 1–2 minutes or place under a broiler to melt.

3. Prepare the tomato topping

  1. In a bowl, combine cherry tomatoes, a drizzle of olive oil, salt, pepper, and sliced basil.

  2. Toss gently.

4. Assemble the dish

  1. Spread pesto over the melted mozzarella on each cutlet.

  2. Add the cherry tomato mixture on top.

  3. Drizzle balsamic glaze over the entire plate.

5. Serve

  • Serve immediately while the chicken is crispy and the toppings fresh.

  • Pairs perfectly with salad, pasta, or roasted vegetables.
