Burrata with Asparagus & Cherry Tomatoes
Ingredients
Main ingredients

1 ball of burrata cheese
-
1 bunch asparagus, trimmed
-
1 cup cherry tomatoes (whole or halved)
-
2–3 tbsp pine nuts
-
Fresh basil leaves
-
1–2 tbsp olive oil
-
Salt & black pepper
For the balsamic glaze
-
3 tbsp balsamic vinegar
-
1–2 tsp honey or maple syrup
Instructions

1. Toast the pine nuts
-
Heat a small pan on low heat.
-
Add pine nuts and toast for 2–3 minutes until golden.
-
Remove immediately to prevent burning.
2. Cook the asparagus & tomatoes
-
Preheat a pan over medium heat and add olive oil.
-
Add asparagus, season with salt and pepper.
-
Cook for 3–4 minutes until bright green and slightly tender.
-
Add cherry tomatoes and continue cooking until they soften and blister slightly.
3. Make the balsamic glaze
-
In a small saucepan, add balsamic vinegar and honey.
-
Simmer on low heat for 2–3 minutes until slightly thickened.
-
Remove from heat.
4. Assemble the dish
-
Place the cooked asparagus on a plate.
-
Add roasted cherry tomatoes around.
-
Place the burrata ball in the center.
-
Drizzle balsamic glaze and extra olive oil over the top.
-
Sprinkle toasted pine nuts and freshly cracked black pepper.
-
Garnish with basil leaves.
5. Serve
-
Serve immediately with crusty bread or enjoy as a fresh appetizer/salad.
