Burrata with Asparagus & Cherry Tomatoes

Ingredients

Main ingredients

  • 1 ball of burrata cheese

  • 1 bunch asparagus, trimmed

  • 1 cup cherry tomatoes (whole or halved)

  • 2–3 tbsp pine nuts

  • Fresh basil leaves

  • 1–2 tbsp olive oil

  • Salt & black pepper

For the balsamic glaze

  • 3 tbsp balsamic vinegar

  • 1–2 tsp honey or maple syrup


Instructions

1. Toast the pine nuts

  1. Heat a small pan on low heat.

  2. Add pine nuts and toast for 2–3 minutes until golden.

  3. Remove immediately to prevent burning.

2. Cook the asparagus & tomatoes

  1. Preheat a pan over medium heat and add olive oil.

  2. Add asparagus, season with salt and pepper.

  3. Cook for 3–4 minutes until bright green and slightly tender.

  4. Add cherry tomatoes and continue cooking until they soften and blister slightly.

3. Make the balsamic glaze

  1. In a small saucepan, add balsamic vinegar and honey.

  2. Simmer on low heat for 2–3 minutes until slightly thickened.

  3. Remove from heat.

4. Assemble the dish

  1. Place the cooked asparagus on a plate.

  2. Add roasted cherry tomatoes around.

  3. Place the burrata ball in the center.

  4. Drizzle balsamic glaze and extra olive oil over the top.

  5. Sprinkle toasted pine nuts and freshly cracked black pepper.

  6. Garnish with basil leaves.

5. Serve

  • Serve immediately with crusty bread or enjoy as a fresh appetizer/salad.
