Greek Salad with Feta
Ingredients

Vegetables

  • 1 cup cucumber slices

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ¼ cup fresh parsley, chopped

Feta & Olives

  • 1 thick block of feta cheese

  • 4–6 green olives

  • 4–6 Kalamata (black) olives

Dressing

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or red wine vinegar

  • ½ tsp dried oregano

  • Salt & black pepper (to taste)

Optional toppings

  • A pinch of paprika or chili flakes

  • Extra chopped parsley


Instructions

1. Prepare the vegetables

  1. Slice cucumbers into rounds.

  2. Halve the cherry tomatoes.

  3. Thinly slice the red onion.

  4. Chop fresh parsley.

2. Build the salad base

  • Place cucumbers, tomatoes, red onions, and parsley into a serving bowl.

3. Add the feta cheese

  • Lay a thick block of feta on top of the veggies.

  • Add green and Kalamata olives around and on top of the feta.

4. Make the dressing

  1. In a small bowl, whisk together:

    • olive oil

    • lemon juice or vinegar

    • oregano

    • salt & pepper

  2. Taste and adjust seasoning.

5. Assemble

  • Drizzle the dressing generously over the feta and vegetables.

  • Sprinkle paprika or chili flakes for extra color (optional).

  • Add a bit more parsley if desired.

6. Serve

  • Serve immediately as a fresh Mediterranean side dish or a light meal.

  • Enjoy with crusty bread or grilled meat if you want it fuller.
